My family is crazy for eggs, but on typical weekday mornings they’re not a viable breakfast option for me to make for the family. Cooking eggs on the stove requires pretty close attention, and I don’t have enough extra time to stand there keeping an eye on them. My kids constant requests for eggs for breakfast got me thinking, though, and led me to this hands-off technique for getting eggs on the table.
Egg Breakfast Sandwich
Ingredients:
- 1 English muffin
- 1 egg
- a little grated cheese (cheddar, jack, mozzarella — whatever you have on hand)
- ham, bacon, or tomato (optional)
Directions:
First, toast your English muffin.
Next, prep your egg. Start off by cracking it into a bowl:
Pierce the yolk and give it a good stir with a fork to scramble it a bit:
Next, microwave it. All microwaves are different, so you may need to experiment a couple times to get your timing right. For our microwave, I start by microwaving the egg for 45 seconds on high. Then I stir it and microwave it for another 45 seconds. The egg is done when there’s no excess moisture left in the bowl. I will looks something like this:
After the English muffin is toasted to your liking, sprinkle one half with a little grated cheese and put an optional slice of ham, bacon or tomato on the other half. If you like, you can put it in the toaster oven at this point to get the cheese a little bit melty and warm the meat or veggies a little. Then when the egg is done, slip it between the two muffin halves and enjoy!
Serves: one hungry kid or parent.

I love making breakfast sandwiches like this. I use bagels instead of muffins too. I would rather take the time to fry the eggs on the stove though. Can’t get into the microwaved egg taste.

@Suzanne Microwaving isn’t my favorite way to cook an egg either (over-easy in a little butter, if you please) but my kids don’t care either way so this works for us. I’ve never tried these on a bagel. I’ll definitely have to give that one a go!
I’m a very picky eater with a high gross-out factor if I don’t like the way something is prepared or feel weird about it for any reason. In the past few years, however, my husband got me hooked on microwaved egg sandwiches at the bagel shop near our house. We go there for breakfast 2-3 times per month and always get a seeded bagel with egg and cheese. I love this breakfast, but the thought of making it at home grosses me out as does ordering it anywhere else that makes the same sandwich.
